Day 2 of my Valentine’s Day Week is almost over but we are finishing it with a bang! These cute Chocolate Raspberry Macarons with an unintended swirl of pink just scream love, hugs and Valentine’s Day! I choose the chocolate raspberry filling because it is so delicious.
Rich chocolate and the fruity juice from the raspberry are a match made in heaven for me and I think they are perfect for the day of love!
A few years ago we had the luck to win a one day trip to Paris and we were able to choose the date we want to travel. We chose February 14 for our trip because what better date to spend the day in the city of love?
Obviously we didn’t have a lot of time for sightseeing as we also won a cruise trip on the Seine. Afterwards we dashed to Champs-Élysées and spend a little time there before we had rush back to the Eurostar.
In Paris I bought my very first Macarons at Ladurée and I suppose it ignited my love for them. :)
The recipe I used is the same I used in my Chocolate Caramel Macarons. It is my go to recipe for macarons so don’t be surprised if it’s the same. :)
Recipe Chocolate Raspberry Macarons
Yields approx. 20 Macarons (about 40 shells)
100 grams ground almonds
100 grams icing sugar
100 grams caster sugar
2x 40 grams egg whites
37,5 ml water (that’s 2 1/2 tablespoons!)
food colour, e.g. Sugarflair Cherry Red
150 grams dark chocolate
75 ml double cream
