These chocolate peanut butter macarons are pure comfort food! Chocolatey, sweet and a tiny bit salty.
I admit I have gone a bit crazy with macarons lately. Tired of macarons? Not me!
I love them! Their Reputation precedes them but I find they are so worth the effort (and practice).
It is quite rewarding when you look in the oven and the macarons have nice smooth shells, pretty ‘feet’ and you can’t wait to fill them and sink your teeth into them.
I am one of those people who can’t wait to ‘ripen’ the macarons in the fridge overnight. Before I do that I have to try one or two.
This is especially hard with chocolate flavored macarons. If you ever made a chocolate ganache you will be familiar with the sweet chocolate smell that fills the house when you made. It lingers all day and it is hard to resist the chocolatey goodness.
Obviously it is no secret that chocolate and peanut butter are a match made in heaven so I wanted to try the flavor in macarons. To make them extra special I dipped the filled macarons in dark chocolate and sprinkled roasted peanuts on it.
Recipe Chocolate Peanut Butter Macarons

100 grams ground almonds
100 grams icing sugar
2x 40 grams egg whites (approx. 2 large eggs)
100 grams caster sugar
37.5 ml water (2.5 tablespoons)
blue food color, e.g. Sugarflair Aztec Blue
150 grams dark chocolate
75 ml double cream
Reese’s Peanut butter cups, chopped
